The best part of a poke bowl is that it’s yours. At The Poki, every bowl is built to order — you call every shot from the base to the final drizzle of sauce. Here’s how we think about building the perfect bowl.
1. Start with your base
Sushi rice is the classic foundation — warm, slightly sweet, the perfect canvas. Want something lighter? Go with fresh greens, or do a half-and-half.
2. Pick your protein
Fresh ahi tuna and salmon are always crowd-pleasers, but don’t sleep on chicken katsu or beef bulgogi if you want something cooked and hearty. Going plant-based? Tofu carries flavor beautifully.
3. Pile on the toppings
Cucumber, edamame, sweet onion, scallion, watermelon radish, furikake — mix textures: something crunchy, something fresh, something creamy.
4. Finish with sauce
Our house-made sauces tie it all together. Classic shoyu for purists, spicy togarashi mayo for heat, or bright ponzu for something lighter.
Four steps, endless combinations, always fresh. Come build yours.
